Hey girls!

Okay so let me tell you about my recipies!

I have been making Cranberry Chicken Salads every day, and I know that you might be thinking of the "jello" cranberry salad, but thats not what I make, that stuff is gross.

My salad has dry cranberries.

Cranberry Salad:
1.) Romaine Lettuce
2.) Grated Parmesan cheese
3.) 2 chicken tenders
4.) sliced cuccumbers
5.) dried cranberries sliced in half
6.) I like Blu Cheese Dressing

Now to make it, I always put the lettuce down, and then dice the cranberries all over the lettuce, sprinkle the parmesan cheese all over the salad, place 4 cucumbers on each corner of the salad, slice the clicken tenders on top of the salad, and then put the dressing on and there you go!!

It is soooo good! I hope those directions arent to hard!

I usually eat one every day.

Heres some other stuff I have made for parties, get togethers, and lunch these last few weeks. I get alot of my recipies from Lilly Pulitzers books, and my new book that I got from a friend of mine called "Southern Cocktails"

Tomato Sandwiches with basil mayonnaise
you use 4 large ripe tomatos (cored)
1 cup of mayo
Salt and pepper just for taste
1/2 cup of fresh basil (it needs to be chopped incredibly small)
and 16 slices of white sandwich bread with the crust trimmed of course!

That one is just amazing for an appetizer!

The next recipe is...
The Classic Mint Juliep
This is SUCH a great drink!
I love watching people make them!

Ya'll will need...
fresh mint leaves
1 tbl spoon of syrup
2 oz (who's counting?) of bourbon
and for decoration, a mint sprig!

The next recipe is out of my Skinny Bitch in the Kitchen cookbook...now I do NOT do organic, I mean I have made it 20 years without it, so why start now so I convert all of the organic stuff to regular junk and its better for my appitite.

Eggplant Parmesan
This serves 4 as an entree or 8 as an appitizer or side dish!
1.) 3/4 cup of parmesan cheese
2.) 1/3 cup of break crumbs
3.) 1 tbl spoon of garlic powder
4.) 2 teaspoons of fine sea salt
5.) 3/4 teaspoon of pepper
6.) 1/2 cup of milk
7.) Coconut Oil
8.) 1 eggplant (1 1/2 pounds) cut crosswide into 1/2 inch slices
9.) 1 1/2 cup of basic red sauce
10.) 1/4 cup of chopped fresh basil leaves
11.) 4 ounces of shredded mozzarella cheese

Preheat over to 350*

Hubby and I went to Champs the other day and I had the salad that had dried cranberries, apples and bacon and chicken in it. Was wonderful. Of course it lasted two meals for me.

I just got Skinny Bitch in the Kith yesterday and I LOVE it!! Can't wait to try out there recipe, they sound yummy. And I' right there w/ you on the whole organic thing....
BTW, love your blog, I have been reading it for a while, but this is my first comment :-)
